Lime Meltaways

We have a few citrus trees in the back of the house, but they are rather shaded so they aren't producing a whole lot. Ben harvested this bunch of beautiful limes and it seemed that they would be perfect for Lime Meltaways. Ice box cookies, or refrigerator cookies, are just the right thing for my kitchen right now. It is usually 85 degrees in the kitchen so no matter what cookie dough I make, it needs to be cooled down in the fridge for a while to firm up enough to be put on a baking sheet. And most importantly, the little ones enjoyed them.
